1) iTunes does that just fine, I think.

2) Don't do the podcast thing, but maybe Sound Studio (felttip.com)? Cheap two-track editor with a few features but not a kitchen sink approach. If you want free, try Audacity. Oh wait..you said in FLAC format? I don't know anything that can edit FLAC natively; you've gotta do your work in AIFF and then compress.

3) I use Cog (cogosx.sourceforge.net), but there's a new program in development called Play (http://sbooth.org/Play/) that looks like it'll eventually be better.
